Knight Bites Closing

After just 4 years in business, the last day open will be March 29th, 2026

After almost four years in business, Knight Bites will serve up it's last pizzas on Sunday, March 29th.

Owner Alexis Mix says that increased competition and decreased customers are ultimately what drove the decision. She said she had been seeing the decision coming for a while, but held off on making the call until recently because she did not want to close the restaurant.

"I have family support, which is great, but there is only so far that can take you," Alexis said during the interview. She shared about working a full time job, spending 40 hours per week at Knight Bites, and the uncounted hours at home working on payroll, inventory orders, bookkeeping, and other administrative tasks. Alexis said she continued to work her job while running Knight Bites because the business never became fully self-sustaining, stating that it was a "financial bleed."

In reference to her employees, Alexis said, "I'm really happy with the teenagers that I've had, they've been fabulous."

Knight Bites will maintain normal hours through Sunday night. Beer and Seltzers have been reduced to $1 each, and other sales may pop up over the weekend to clear food inventory before the final closing.
